Υπομονήypomoni (ee-po-mo-NEE) — is the Greek word for patience. It's the word our name comes from, and it's the whole idea behind this company: everything worth harvesting takes time.

A physician who got tired of the hype

Pomoni was founded by Dr. Peter Matos, D.O., MPH — a physician who kept running into the same frustration. The science on olive polyphenols was genuinely exciting: real, peer-reviewed research on cardiovascular health, healthy inflammation, recovery, and healthy aging. But the shelf didn't match the science. Brands were competing on who could print the biggest number on the label — often by using testing methods that inflate the figure rather than measure it honestly.

Pete's reaction was simple: prove it, then sell it. If we're going to make a claim, we should be able to hand you the lab report behind it.

Why "patience"

The best olive polyphenols come from olives picked early — before they're fully ripe, when their protective compounds peak — and pressed within hours, before those compounds fade. You can't rush it, and you can't fake it. That's ypomoni: the patience to harvest at the right moment, test at every step, and let the quality speak instead of the marketing.

It's also how Pete thinks about people. This is a company built on relationships — on treating customers like family and earning trust slowly, honestly, one honest label at a time.

From a single Greek grove

Our olives are Koroneiki, early-harvest, from Greece — the variety and timing that naturally produce high polyphenol levels. We test at the grove, at production, and per batch, and we verify with HPLC, the gold-standard method, publishing certificates you can actually read. We run NMR too, but we never lead with the inflated number. Here's why that distinction matters.
