My business partner and I are both in the medical field. I am a physician and she is a nurse. We have spent our whole lives working to help make others healthy through Diet and exercise. 



We believe in a healthy diet and that food is the medicine. Our goal is to help people become the best version of themselves, and we believe that O-liv can be part of a good diet and exercise program.



One of the challenges we found is a lot of people don’t like to take olive oil raw. Some people find  that high phenolic olive oil taste like grass and are not able to take 1.5 tbsps of high phenolic olive oil. Some of my patients said "doc if you can make a pill, I’ll take it, but I can’t take 2 tablespoons of high phenolic olive oil. I just can’t do it. In fact, one of my nurses , said the same thing. This is how the idea of O-liv began. Our goal was to bring high phenolic olive oil in a tablet to the consumer .

Dr. Peter Matos didn’t set out to build an olive oil company.

He set out to understand why some people age well — and others don’t.

As a practicing physician trained in preventive medicine and public health, Dr. Matos has spent years working with patients who want to protect their heart, reduce inflammation, improve performance, and remain active for decades to come. And through that work, one truth has become clear:

What we eat every single day matters more than almost anything else.

  • Not occasionally.
  • Not seasonally.
  • Every day.

In clinic, he repeatedly saw patients who believed they were making healthy choices. They exercised. They avoided obvious junk food. They used olive oil because they had heard it was “good for the heart.” Yet their biomarkers — inflammation, lipid profiles, recovery metrics — often told a more complicated story.

That disconnect sparked deeper curiosity.

In 2022, Dr. Matos attended a Mediterranean Diet Conference in Crete, Greece, where the Mediterranean lifestyle isn’t an abstract concept — it’s daily life. There, he saw something powerful: health wasn’t built on restriction or extremes. It was built around fresh foods, consistency, and deeply ingrained dietary habits passed down for generations.

He also immersed himself in the science behind olive oil — particularly the role of polyphenols in reducing oxidative stress and supporting cardiovascular health.

What he discovered was striking.

The health benefits associated with olive oil in medical studies are directly tied to its polyphenol content — and those levels vary dramatically depending on harvest timing, processing, storage, and testing methods. Many products labeled “extra virgin” simply do not reflect the oils used in clinical research.

For Dr. Matos, this wasn’t just about olive oil.

It was about a larger principle:

If something is consumed daily, its quality compounds over time — for better or worse.

As he often tells patients:

“Longevity isn’t built in a lab. It’s built at your kitchen table.”

Daily nutrition is not a trend. It is cumulative biology. The meals we repeat, the fats we cook with, the foods we normalize — these shape inflammation levels, vascular health, recovery capacity, and ultimately how we age.

That realization led him to found O-LIV, a physician-founded Greek olive oil and olive-based supplement company focused on performance, recovery, and longevity. Unlike brands that rely on marketing terms, O-LIV verifies polyphenol levels using advanced laboratory testing methods such as HPLC and NMR — emphasizing measurable quality over assumptions.

But the mission goes beyond one product.

It’s about elevating standards around what we consume daily. It’s about reminding people that health is not created through occasional interventions, but through repeated habits.

His core belief:

“Recovery and longevity are the same conversation — athletes just feel it sooner.”

Dr. Matos continues to work with patients, athletes, and health-conscious adults who want evidence-based strategies to improve performance, protect cardiovascular health, and extend healthspan — without chasing extremes.

Where It Started

Nov 2022 - Mediterranean Diet Conference

In November 2022, we attended a conference focused on the benefits of the Mediterranean diet. The idea for O-liv sparked at this event as we noticed a lack of options for quality supplements in the market.

Partnering with Greek Manufacturers and Importing into the USA

We decided to partner with Greek manufacturers who were already well-versed in producing high-quality products using olive oil, a key ingredient in the Mediterranean diet. We also saw an opportunity to introduce these products to consumers in the USA by importing them directly from Greece.

Sampling and Slow Launch of O-liv

Before launching O-liv officially, we wanted to ensure that our products met the high standards and quality that we promised. We sampled our products to a select group of consumers who were familiar with the Mediterranean diet and received positive feedback.

Olive Oil Is Medicine

I started taking O-Liv last fall when my physician wanted me to start taking a statin for cholesterol. Along with some dietary changes, O-Liv helped me lower my cholesterol by 78 points and lowered my triglycerides by over 60% in just four months. I wouldn’t believe it if I hadn’t done it myself!
